Chocolate Peppermint Cookies

The Holidays are my favorite time of year. Who doesn't love all the shimmering lights, ornamented garlands, Peppermint Mochas, and of course Christmas cookies? Every year my mother makes our family recipes that have been passed down from grandparents of grandparents. I, however, like to try out new recipes each year and have found this to be one of my absolute favorites (and now I am making it year after year). I recently made it for a cookie exchange party among friends and they were an instant hit. It's a double chocolate peppermint cookie, a combination of two of my favorite holiday flavors.

Chocolate Peppermint Cookies


2 c. All Purpose Flour
3/4 c. Cocoa Powder
1 tsp. Baking Soda
1/2 tsp. Salt
1 c. or 2 sticks Unsalted Butter
2/3 c. Granulated Sugar
2/3 c. Brown Sugar
1 tsp. Peppermint Extract
2 large Eggs
3/4 c. chopped Andes Chocolate Peppermint
3/4 c. Chocolate Chips


1. Heat oven to 350 F.
2. Mix flour, cocoa, baking soda, and salt in a medium sized mixing bowl.
3. Using a mixer, beat butter, granulated sugar, brown sugar, and peppermint extract until the mixture is creamy,
4. Add eggs, one at a time, beating well after each addition.
5. Gradually add in the flour mixture.
6. Stir in the chopped Andes pieces and chocolate chips.
7. Drop by rounded tablespoon onto baking sheets. 
8. Bake for 8-10 minutes, or until the centers of the cookies are set but soft to touch.
9. Cool on baking sheets for 2 minutes, then remove using a spatula.
10. Enjoy with a cold glass of Eggnog or some hot chocolate!
