Rocky Road Cookies

I love ice cream. I know that these are cookies and not, in fact, ice cream, but go with it. If Half Baked and Phish Food aren't available (I'm a bit partial to Ben & Jerry's), then it's rocky road all the way. So instead of ice cream, put the marshmallows and walnuts in some delicious double chocolate cookie dough and voila! Rocky Road Cookies!

Rocky Road Cookies


1/2 c. Unsalted Butter
1 1/2 c. Sugar
2 Eggs
2 tsp. Vanilla
1/2 c. Chocolate, chopped (to be melted)
1/2 c. Chocolate chips
1/2 tsp. Baking Powder
1/2 tsp. Salt
1 c. Flour
1/2 c. Cocoa Powder
1/2 c. Chopped Walnuts
2/3 c. Mini Marshmallows


1. Preheat oven to 325*F. With a whisk, combine flour, cocoa powder, salt, and baking powder in a small bowl.

2. Chop the stick of butter into small chunks and make sure the 1/2 of chocolate to be melted is chopped into chunks as well.

3. Place both butter and chocolate in a small metal bowl that is placed over a pot of simmering water, over medium heat. Stir continuously until both the butter and the chocolate are completely melted.

4. Once they are melted, remove from heat and pour into the bowl of a mixmaster. Add eggs and sugar. Mix on medium speed until smooth. Add vanilla, continue to mix for one more minute.

5. Reduce speed to low, or a stir setting, and slowly add in flour mixture.

6. Stir in walnuts, chocolate chips, and marshmallows.

7. Drop by rounded spoonful onto non-stick baking sheets. Bake for about 8 minutes, but be careful not to over bake. The cookies are done when they flatten and start to crack.

8. Let cool for five minutes before removing with a spatula.
