Birthday Cake Pancakes


Happy birthday to me!!!

Yesterday was my birthday and I love birthdays (who doesn't??). The best part of my birthday (besides the presents) are all the birthday sweets! On my way home from work the night before, I stopped at Magnolia and pick up a vanilla cupcake with milk chocolate buttercream to eat at midnight and start my birthday off with a bang. For breakfast, my roommate, Maria, and I made birthday cake pancakes. The recipe that I came up with is a mix of a traditional pancake recipe and my vanilla cupcake recipe. They have the lightness of a great vanilla cupcake mixed with the fluffiness of a buttermilk pancake. Super amazing and definitely made my birthday that much more fabulous. These are so much fun and can be decorated any way. Pancakes with icing, sprinkles, and edible glitter at 10 am? I am so down.





Birthday Cake Pancakes

Ingredients

Pancakes:
1 1/2 c. Flour
1 c. Granulated Sugar
2 tbsp. Unsalted Butter
1 tsp. Vanilla
1/2 tsp. Baking Powder
1 egg
1 c. Milk
1 tbsp. Canola/Vegetable Oil
1/2 tsp. Salt
Sprinkles! - about 1/8 - 1/4 cup

Icing:
1 egg white
1 1/2 c. Powdered Sugar
Food Coloring (optional)




Directions

1. In a small bowl, combine flour, powdered sugar, and salt. Set aside.

2 In a medium to large bowl, mix egg, butter, vanilla, and milk until combined. Add in sugar and mix well.

3. In a few additions, add the flour mixture, mixing well after each addition. Do not worry about over mixing here like you would for regular pancakes. These can be a bit more cakey.

4. In a separate bowl, whisk the egg white and powdered sugar and food coloring (optional) until well mixed and there are no lumps. It should be a bit thick and not very runny.

5. Pour about half the tablespoon of canola/vegetable oil onto a paper towel and grease the inside of a skillet. Repeat with the other half. Heat the skillet for about 30 seconds over low to medium heat.

6. Pour about 1/4 c. of batter onto the skillet per pancake. Cook until the surface begins to bubble and then flip. Cook for a minute to two minutes longer before removing.

7. Stack your pancakes and pour icing on top. Decorate with sprinkles. Add a candle. Make a wish. Happy Birthday!
