Pumpkin Spice Snickerdoodles



Now that Thanksgiving is over, we're supposed to be trading in our spicy pumpkin flavors for cool peppermint, but I'm having a bit of separation anxiety. I'm just not ready to let go. Pumpkin is one of my favorite flavors and I would use it all year if I could. Maybe not in the summer. What better place to put a little pumpkin in than a minxy cookie filled with sugar, spice, and everything nice. What's not to love? I love sweet eats as much as the next gal, but sometimes I could use a little spice in my life and these cookies are the ticket.




Pumpkin Spice Snickerdoodles

Ingredients

3 c. All Purpose Flour
1 tbsp. Pumpkin Puree
1 tsp. Baking Powder
1 1/2 tsp. Baking Soda
1/4 tsp. Salt
1 c. Unsalted Butter
2 c. Brown Sugar
2 Eggs
2 tsp. Vanilla
2 tbsp. Granulated Sugar
1 tbsp. Cinnamon
1/2 tbsp. Pumpkin Pie Spice

For Topping
3 tbsp. Cinnamon
1/2 tbsp. Pumpkin Pie Spice
4 tbsp. Granulated Sugar

Directions

1. Preheat oven to 350*F.

2. In a small bowl, combine flour, salt, baking powder, baking soda, cinnamon, and pumpkin pie spice. Blend and set aside.

3.In the bowl of a mixmaster, cream butter on medium for two minutes. Add brown sugar and 2 tbsp of granulate sugar and continue mixing on medium until thoroughly combined and creamy, about three minutes.

4. Add eggs one at a time, mixing well with each addition. Add vanilla and pumpkin puree, mix well.

5. With the mixmaster on stir, slowly add the flour mixture in three additions, mixing well between each addition.
6. In a small bowl, combine the cinnamon, pumpkin pie spice, and granulated sugar. Pour half onto a flat plate. Save the other half and replenish as necessary.

7. Using a spoon, form about 1 1/2 tbsp. of cookie dough into a ball. Roll the ball through the cinnamon-spice-sugar mixture until thoroughly coated. Place on cookie sheet, keeping cookie dough balls about 2 inches apart from each other. Repeat until there is no more dough.

8. Bake for about 8 minutes, or until the edges of the cookie begin to brown. Remove from the oven and let cool on cookie sheet for about five minutes. Remove with a spatula and enjoy.
