Banana Bread Pancakes with Vanilla Maple Glaze

I have friends and we make pancakes on Sunday mornings. We call ourselves the pancake squad. Because... obviously.

Banana Bread Pancakes with Vanilla Maple Glaze
Serves 4 | total time: 45 minutes | hands on time: 45 minutes

2 tbsp. Unsalted Butter, melted
1/4 c. Light Brown Sugar, packed
3 Large Ripe Bananas, mashed
1 tbsp. + 1 tsp. Vanilla Extract
1/4 tsp. Salt
1 1/2 tsp. Cinnamon
1/2 tsp. Nutmeg
2 tsp. Baking Powder
1 3/4 c. All Purpose Flour
2/3 c. + 2 tbsp. Milk
1/3 c. Maple Syrup
2/3 c. Powdered Sugar


Combine dry ingredients: flour, salt, cinnamon, nutmeg, and baking powder in a small bowl and set aside.

In a large bowl, combine mashed bananas, milk, and 1 tbsp. of vanilla extract until well-combined. It's okay for mixture to have small banana lumps. Whisk in the brown sugar. Add dry ingredients to the mixture and whisk to combine. Finally, stir in the melted butter.

Heat a skillet over medium-low to medium heat for about 30 seconds. Pour 1/4 c. of batter onto the skillet and cook until bubbles form on top, about 2 - 3 minutes, and then flip. Cook for a 1 -2 minutes and then remove from heat. Repeat until all the batter has been used.

For Vanilla Maple Glaze, combine the maple syrup, powdered sugar, and remaining 1 tsp. of vanilla extract until well combined and there are no lumps.

Stack pancakes and pour vanilla maple glaze on top. Enjoy!
