Chocolate Chip Pancakes

Chocolate chip pancakes are such an all time favorite. Thinking about them brings me back to memories of my siblings and I sitting around the island in my parents' kitchen while anxiously awaiting a plate of hot, chocolatey, and gooey flapjacks made by the hands of my father.

Chocolate Chip Pancakes
makes 8 pancakes | total time: 30 minutes | hands on time: 30 minutes

1 c. Milk
1 c. Flour
1 Egg
1/2 tsp. Vanilla Extract
2 tsp. Baking Powder (make sure its GF)
3 tbsp. Melted Butter
1/3 tsp. Salt
1/4 c. Granulated Sugar
1 1/2 c. Chocolate Chips

Butter and Maple Syrup for topping


In a large bowl, combine all ingredients except for melted butter and chocolate chips, either whisking or using a mixmaster. Add in melted better and continue to beat. Stir in chocolate chips.

Heat a lightly buttered pan or griddle over medium heat. Scoop approximately 1/4 c. of batter onto pan, using a spoon to spread to about 1/2 inch thickness. It's necessary to do this as the batter will not spread on it's own. Cook for about 2-3 minutes on this side, until bubbles form, then flip over onto the other side and continue cooking for 2 additional minutes or until they've reached a golden brown color. Repeat until all batter has been used.

Serve hot with butter and maple syrup (should you wish to use it). Enjoy!
